Prep Time 15 minutes
Cook Time 25 minutes
Servings 4

Ingredients:

  • 400g (14 oz) canned crushed tomatoes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh basil leaves, roughly chopped, plus more for garnish
  • Salt and freshly ground black pepper to taste
  • 450g (1 lb) pasta (such as penne, rigatoni, or spaghetti)
  • 2 balls (approx. 250g) burrata cheese

Instructions:

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion and sauté for 3-5 minutes, or until softened and fragrant. Be careful not to burn the garlic.
  3. Stir in the crushed tomatoes and red pepper flakes (if using). Bring to a simmer and cook for 10 minutes, stirring occasionally, to allow the flavors to meld.
  4. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste. Simmer for another 5 minutes, stirring occasionally, until the sauce has thickened slightly.
  5. Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  6. Stir in the chopped fresh basil.
  7. Divide the pasta among bowls. Top each serving with half a ball of burrata cheese and a sprinkle of Parmesan cheese and fresh basil.

Expert Tips & Variations:

  • Ingredient Substitution: If you don't have burrata, you can substitute fresh mozzarella or ricotta cheese.
