Heavy cream 120ml (1/2 cup)
Grated Parmesan cheese 60g (1/4 cup), plus more for serving
Fresh basil leaves, chopped 30g (1 cup loosely packed)
Salt and freshly ground black pepper To taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 5-7 minutes, or until softened and translucent.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet and cook for 1 minute more, until fragrant.
  4. Pour in the crushed tomatoes, dried oregano, salt, and pepper. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
  5. Stir in the heavy cream and Parmesan cheese. Cook for 2-3 minutes more, until the cheese is melted and the sauce is smooth and creamy.
  6. Add the cooked pasta to the skillet with the tomato sauce. Toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  7. Stir in the chopped fresh basil.
